Happy Thanksgiving!






















First of all, I want to wish a happy Thanksgiving to anyone that is reading this blog. I hope with all my heart that your life is full of love and happiness always.

I have been running around like a chicken without a head. Between the holiday, Disney, Carmela's IEP and of course our adoption, my mind and body have been working in overload. I am looking forward to tomorrow just sitting and relaxing with my children and watching the Thanksgiving Day parade. Afterwards, we will try to put both kids down for a nap, and then head down to my Mom's for Thanksgiving dinner. Well in my family it not "just" a dinner. We do the whole Italian feast. We start off with antipast (my favorite), then go to the gravy dish (I think its stuffed shells or manicotti or ravioli this year), then after all that we go on to the traditional Thanksgiving dinner :) My Mom makes the best stuffing ever -- no joke. I am making my ever so famous sweet potato casserole, then of course the turkey, etc. Then we move on to the fruit and lastly the pies and desert. YUM! Now you know why us Italians battle with our weight :)

I've been cooking a little Thanksgiving dinner here tonight. Since Carmela is on a special diet, she can't eat anything that my Mom is preparing, so I made sure to get her some "special" pepperoni, salami, and ham for the antipast. I also got her the tinkyada pasta with some gravy. Then tomorrow I will make her stuffing and some turkey. For dessert, she has her very own pumpkin pie, her request. Everything for her is gluten and casein free. And it really is YUM!

It is hard to believe that this our last Thanksgiving a family of 4! No matter when we get our referral, we *should* have our baby home by Thanksgiving of next year. I say *should* because in the end this is international adoption, and until that baby is home, I will never count my chickens before they hatch. With that said, I think I am at the point that I will be disappointed if I don't have a referral by Christmas. I tried hard not to think about it, but I am so looking forward to seeing a picture of this baby I dream about.

On to some fun topics, we leave for Disney on FRIDAY! We are SO excited. But of course in normal Beitler fashion, Carmela broke down with a fever tonight. She has the chills and looked HORRIBLE. She is now in bed, but I am expecting a lousy night. Just please pray she feels better for Friday! I am hoping its a 24 hour bug and she is better soon. She will be crushed if she's sick at Disney.

YUMMERS!! THat dinner sounds so good, Jackie, I wish I was there. :) Hope Carm's better in time for your trip and hope you guys have the BEST time!!
